Every home cook should know how to make simple syrup at home. With only two ingredients, the process is "simple" and the uses are endless.

LAGOON WATER

½ oz lime cordial 🍋‍🟩
¼ oz blue simple syrup 🔵
1½ oz gin
1 dash umami bitters
4 drops saline
top with seltzer

Garnish: orchid
Method: Set soda aside and build drink in glass in the order listed. Add a large rock of ice, add soda, and stir until color is even.

I found this one on the cheerstohappyhour IG channel and had to work my butt off to make it happen ;) The build is quite involved as listed, making blue simple syrup and I also had to make the lime cordial (I'd wanted to for a while anyway). The umami bitters are also very niche, but luckily I'd already gotten them for another cocktail some months back. And finally, the clear ice and maintaining orchids at home are both their own projects spanning days/months :D If you can manage to make it, it's got a five-star look and tastes great on a sunny afternoon!

🔵 Blue simple syrup: combine 1 cup sugar and ¾ teaspoon blue spirulina powder (or food coloring), and stir to incorporate dry ingredients. Once mixed, add one cup water then stir until everything is dissolved.

WINTER BASIL SMASH

handful fresh basil
1 oz lemon juice
¾ oz simple syrup
2 oz aquavit

Garnish: basil leaf
Method: Set aside one basil leaf as garnish. In a shaker, muddle remaining basil leaves with lemon juice and simple syrup. Add aquavit and ice cubes, shake, and double strain into a rocks glass with fresh ice cubes.

An interesting riff on the Gin Basil Smash, it's refreshing yet has a touch of warming notes from the aquavit. Don't be scared off by the two full shots. This one is balanced nicely by the generous amounts of lemon and simple. I had Thai basil on hand when I took the photo and I thought it worked well in the cocktail, even though the spec calls for the Italian variety. I first saw this one on IG from theeducatedbarfly.

½ oz grapefruit juice
¾ oz simple syrup
¼ oz Campari
1½ oz Tequila blanco

Garnish: lime wheel
Method: Combine all ingredients in a shaker with 12 ounces crushed ice, shake, and double-strain into a coupe glass. Garnish by placing lime wheel on the rim of the glass.

A delicious spin on the Hemingway Daquiri. I'm always down for a tequila sub! Easy going down so watch out ;) Found on IG subtletiki channel.

½ oz lemon juice
¼ oz simple syrup
½ oz red beet juice
¾ oz tawny port
1½ oz mezcal reposado
2 dashes Angostura bitters

Garnish: salt rim
Method: Salt the coupe with black salt. Combine all ingredients in a mixing glass and stir with ice. Double strain into coupe.

An original of mine. I consider it a margarita riff and got inspired by the carrot-based Power Up Technique (look through my profile). It's very earthy, which pairs well with the mezcal. Plus, the color makes it perfect for Halloween!

Power-Up Technique

¾ oz lime juice
¾ oz carrot juice
½ oz simple syrup
2 oz mezcal joven
a few sliced chilis

Garnish: salt rim, lime twist
Method: Prepare the glass by rubbing the rim with lime then dipping it in salt. Combine all remaining ingredients in a shaker with ice and shake. Open pour into the glass and garnish with lime twist.

A lovely margarita riff from @highproofpreacher@threads.net — the carrot works so well bringing both sweetness and an earthy tone to complement the mezcal. I have a balcony-grown chili as a garnish in the photo, but for the drink itself I often prefer for a couple dashes of tabasco or other vinegar hot sauce to add heat.

Gin Basil Smash

handful fresh basil
1 oz lemon juice
¾ oz simple syrup
2 oz london dry gin

Garnish: basil sprig
Method: muddle the basil leaves and gin in a shaker. Let sit for two minutes to absorb more color. Add the remaining ingredients with crushed ice, shake, and double strain. Serve up or over a big rock.

This is a go-to on a sunny day, and half the reason I keep two kinds of basil growing on the balcony 🪴 I wanted to use the last of my purple basil before the nights get too cold, and was really pleased with the turnout!

I saw this riff on the Aviation from @servedbysoberon@threads.net which thankfully omits the violet liqueur (I'm not a fan). Instead, the brilliant color comes from butterfly pea flower gin. This photo used Empress 1908 but any similar gin works.

½ oz lemon juice
½ oz lime juice
¼ oz grenadine
½ oz demerara syrup
¼ oz absinthe
2¼ oz Black Pot Still Rum
1 oz seltzer

Garnish: pineapple frond
Method: Combine all ingredients with ice, shake or flash blend, open pour.

This one is one of my favorite tiki drinks. This version is from the Smuggler's Cove book, page 266. In it Martin Cate emphasizes that a funky Jamaican rum is needed to stand up to the hearty dose of absinthe. Jamaicans are far and away my favorite rums so this one always hits the spot for me. Pictured in the background is Hamilton's black pot still, which is the specific rum called for in this drink. However, if you don't have it on hand you can blend two rums (a black and a pot still) to land mostly in the same place, as is praxis in tiki anyway.
