(Many years ago) for several months, I worked with my best friend at a place where we cooked crawfish, shrimp and sausage all day among other things. I've also been to many crawfish boils while living in the south.
I essentially made mashed potatoes with crawfish, shrimp and sausage with all the ingredients you'd expect at a crawfish boil. It came out really good, but I don't know that I'd make it again anytime soon unless the prices on shrimp and crawfish come down.
