Finished off the #absinthe we've had in the liquor cabinet (well, shelf) for awhile by making an "Absinthe Sour" (yeah, I know... I didn't have the will to drink it the proper way).

Wow, the 69% ABV feels like a lot. More than my usual #mezcal .

Clearing out a cabinet, I found a old bottle of St George Absinthe from 2007. Once we removed the cork, we've discovered the aging has made it the mellowest most palatable absinthe I've ever tasted.

This is a clear win.
