Here's the dough #recipe for fol ks interested (I do it fluidly so this is an approximate). Will post a video for next time.
Btw, I don't like using yeast because I feel bad using organisms just for getting a rise out of the dough and killing them off.
- Mix gluten based flour or non gluten based with some starch and a couple of teaspoons of baking powder and soda with pinch of salt
- mix with a little water at a time until the dough is soft and stretchy.

After posting my breakfast-bread-buns made of the left over #dough. The pizza-part is sitting in the fridge till tomorrow evening.
The bread-buns are awayting their fate well hidden underneath a towel in the oven for the next 6 hours.

Todays dough is made of 1kg flour, 2.5g yeast, 635g water, 20g salt
Its a new flour and probably i should have taken some more water. Tomorrows fire will show the outcome

After kneading temperature dough was 25C, proofing dough 1h at ambiant temperature 21C with two coild foldings, divided (600g), rest the divided dough for 20 min, shaped, then final proofing 10 min in bread basket
baked in household oven at 250C 40 min in iron dish
bread is less aerated and bubbles size are smaller than previous TH72% bread, likely due to too much coild foldings and/or unsuitable proofing, but crumb is so good and soft
