I've bought a spiral dough mixer. It took 51 days to come by boat from China, but at 27kg that seems a sensible shipping method. Payment was easy via Alibaba.

The first batch of baguette dough emerged a bit tight, so I'll incorporate a 15 minute rest before tidying up and putting in the fridge overnight.
