¾ oz passion fruit syrup
¼ oz coconut cream
½ oz absinthe
1 oz Blended Lightly Aged Rum ❷
1 oz Blended Aged Rum ❸
Float of overproof Pot Still Unaged Rum

Garnish: mint sprig, lime wheel
Method: Combine all ingredients except rum for the float in a shaker with crushed ice and shake. Open pour into glass, top with ice, float the rum, and garnish.

EL VOLCANITO

1½ oz grapefruit juice
¾ oz fresh lime juice
1 oz maple syrup
¼ oz cinnamon syrup
1½ oz Black Blended Rum ❺
1½ oz Pot Still Lightly Aged Rum ❶

Garnish: spent lime shell, mint sprig
Method: Combine all ingredients except overproof rum in a mixer tin with 12oz crushed ice and flash blend for 10 seconds. Open pour into the glass and garnish with mint and spent lime shell face up.

Pour the overproof rum into the spent lime shell, and serve drink. Ignite the rum inside the lime shell once the glass is in place.

Dusting the flame with cinnamon is always a sure-fire way to impress your friends! I was pretty happy with my flame in this photo, but a darker room will produce an even more stunning effect.

½ oz Pot Still Lightly Aged Rum ❶
¼ oz Black Blended Rum ❺

Garnish: mint sprig, orange peel, edible orchid
Method: Combine all ingredients in a shaker with crushed ice. Shake and open pour into glass. Top with ice and garnish.

This is a crowd pleaser no matter how many tiki drinks you've tried: safe enough for newcomers, but the aquavit delivers something interesting to those who've had them all. It was created by Matthew Belanger at Death & Company.

5 mint leaves
¾ oz demerara syrup
¾ oz lime juice
2 oz Pot Still Aged Cachaça

Garnish: lime wheel
Method: muddle the mint with the syrup and lime juice in a cocktail shaker. Add the cachaça and cracked or cubed ice. Shake and double-strain into a chilled coupe. Garnish with a lime wheel speared on a pirate sword cocktail pick.

Allegedly the favored drink of Sir Francis Drake, this cocktail is a nod to the famous pirate. When I took the photo I didn't have a sword cocktail pick so I used a Surfside Sips bone pick which seemed fitting. This version comes from Smuggler's Cove page 163, which feels like a cross between a Mojito and Caipirinha.

KINGSTON SOUND SYSTEM

¾ oz lime juice
½ oz pineapple juice
1 barspoon demerara syrup
½ oz Suze
1 oz aged Pot Still Rum
½ oz overproof Pot Still Unaged Rum

Garnish: pineapple frond, lime wheel
Method: Combine all ingredients in a shaker with ice and shake. Strain over a big rock and garnish.

Pineapple is a substitute for the original ingredient called soursop. Since that's hard to track down, I just stick with pineapple and added a barspoon of syrup to the recipe. I also subbed the spec's blend of aged pot still and OP unaged pot still by using Doctor Bird OP, which combines the two in one delicious bottle.

The original spec is by Shannon Mustipher and appears in her book Tiki: Modern Tropical Cocktails.

Method: Build in glass, stirring with the rock. Garnish with an orange twist.

Stirring my way through the cold weather. I found it hard to pick out the base spirits. Rather, they intensified the bitters and amaro bringing out strong spicy flavors balanced out nicely by the syrup. I found this one on IG chips_classic_cocktails.
