A bit more bitter for those die-hard Jungle Bird fans. After preparing as directed, snapping the pic, and finally starting to sip I found it way too potent to be over a rock. I'd recommend an open pour over crushed ice. Originally seen on IG onesipclub.

MEXICO NAVY

1 oz lime juice
½ oz ginger syrup
½ oz orgeat
2 oz Tequila blanco
2 drops saline solution

Shake // Strain // Garnish: candied ginger

Created by Jordan Valls at Palomar in Portland, OR. It’s a riff on the classic Army & Navy, but to me felt like a ginger margarita. It was lip-smackingly delicious but almost too potent; I'd lengthen it a bit with some seltzer next time.

PISTACHIO MAI TAI

¾ oz lime juice
½ oz falernum
¼ oz orgeat
¼ oz SC Mai Tai syrup
2 oz Blended Aged Rum ❸
float ½ oz Strato pistachio distillate

Garnish: spent lime shell, mint sprig
Method: combine all ingredients with 12 oz crushed ice in a cocktail shaker. Shake until a frost forms on the shaker and pour the entire contents into a double old-fashioned glass. Garnish with the spent lime shell and mint sprig, arranged like a tree on a little island.

My late entry for Mai Tai Day 2025 :) The Strato is a really delicate spirit with low sugar content that provides a pillowy-soft nutty flavor when floated, elevating the orgeat. The rum is a blend as follows:

- 1 oz Hampden Estate 8yr
- ½ oz Doctor Bird
- ½ oz Clairin Le Rocher

BITTERSWEET IDENTITY CRISIS

2 dashes lavender bitters
½ oz orgeat
¾ oz Green Chartreuse
1½ oz mezcal

Garnish: lemon peel
Method: Combine all ingredients in a mixing glass, add ice, and stir. Strain over a large rock of clear ice, express lemon peel, and garnish.

I saw this from IG highproofpreacher and felt compelled to try it immediately. As he said, it's a weird one! But it was delightful and confusing on my tongue all at the same time. Sweetness from orgeat followed by the herbal notes and finishing with smokiness, it defies categorization. I chose a slightly higher proof mezcal from Alipús at 47.5% which stood up nicely to the Chartreuse and fat pour of orgeat.

I didn’t have lavender bitters, so I went aromatic with home-grown lavender from my balcony slightly charred with a flame.

I know what you're thinking, it's barely a Mai Tai.. but still, it has orgeat and packs a punch on a sunny afternoon 🤣 This version comes from Lui Fern's channel on IG, but when I searched around I found several variations. Original garnish calls for fresh pineapple chunk, Lui used dehydrated, but I had peaches around and felt it complemented the bourbon and peach liqueur. You do you!

½ oz lemon juice
½ oz orgeat
1½ oz rye whiskey
2 dashes Angostura bitters
3 oz New England IPA

Glassware: Double old-fashioned
Method: Combine lemon, orgeat, rye, and bitters in a shaker with ice and shake. Add the beer directly to the serving glass, then open pour the shaker into the glass. Garnish with mint.

An original by servedbysoberon on IG, but I've modified it to be more beer-forward by downplaying the sweet/sour a bit. The beer is called Frida, a #NEIPA by local brewer Braukollektiv in #Freiburg. Great summer smasher!

This is a crowd pleaser no matter how many tiki drinks you've tried: safe enough for newcomers, but the aquavit delivers something interesting to those who've had them all. It was created by Matthew Belanger at Death & Company.
