3 oz pineapple juice
1 oz lemon juice
¼ oz SC demerara syrup
1 oz ginger liqueur
½ oz St. Elizabeth allspice dram
1 oz Black Blended Rum ❺
1 oz Blended Lightly Aged Rum ❷

Garnish: grated nutmeg
Method: Add all the ingredients to a drink mixer tin. Fill with 12 ounces of crushed ice and 4 to 6 agitator cubes. Flash blend and open pour into a hollowed-out pineapple. Garnish with grated nutmeg.

A real job to hollow out the pineapple, but the fun vessel makes it worth it! Also no harm in throwing an extra straw in there for a party of two who won't mind sharing.

½ oz banana liqueur
1¼ oz aquavit
½ oz Pot Still Lightly Aged Rum ❶
¼ oz Black Blended Rum ❺

Garnish: mint sprig, orange peel, edible orchid
Method: Combine all ingredients in a shaker with crushed ice. Shake and open pour into glass. Top with ice and garnish.

This is a crowd pleaser no matter how many tiki drinks you've tried: safe enough for newcomers, but the aquavit delivers something interesting to those who've had them all. It was created by Matthew Belanger at Death & Company.

5 mint leaves
¾ oz demerara syrup
¾ oz lime juice
2 oz Pot Still Aged Cachaça

Garnish: lime wheel
Method: muddle the mint with the syrup and lime juice in a cocktail shaker. Add the cachaça and cracked or cubed ice. Shake and double-strain into a chilled coupe. Garnish with a lime wheel speared on a pirate sword cocktail pick.

Allegedly the favored drink of Sir Francis Drake, this cocktail is a nod to the famous pirate. When I took the photo I didn't have a sword cocktail pick so I used a Surfside Sips bone pick which seemed fitting. This version comes from Smuggler's Cove page 163, which feels like a cross between a Mojito and Caipirinha.

ANGOSTURA COLADA

1 oz lime juice
1½ oz pineapple juice
1½ oz coconut cream
1½ oz Angostura bitters
½ oz Pot Still Lightly Aged Rum ❶

Garnish: grated nutmeg, pineapple frond
Method: Combine all ingredients in a mixing tin with crushed ice and blend. A shaker with crushed ice will also do. Open pour with gated finish into glass and garnish.

I always like drinks with bitters as a base spirit. They're bound to be bold and interesting! This one is tempered by coconut and pineapple, with a little bit of pot still rum to give it that Daq vibe. Hoping to see weather like this again soon!
