I had a really nice walk today, all along some smaller streams in my small city. Hence, 'Streaming'. Quickly mapped the walkand wrote a note on it [1]. It was really nice to see how the streams interact with the built city and vice versa. It's also not the first time I had some intimate contact with the local river system, as I was made an audiovisual work in 2023 [2] on a beaver family that moved into on of the side canals, as part of an ethnography course. Finally added the actual video to the internet [3].

Found from IG fredericyarm and he credits Brandon Bramhall at Nashville's Attaboy circa 2017. Lovely sip with all the acidity and sugar coming from alcoholic ingredients, but without too much base it's not overly boozy.

QUATRESSE

3-4 sage leaves
1 oz lemon juice
½ oz simple syrup
2 oz Suze
1 barspoon scotch

Muddle // Shake // Double strain // Garnish: sage leaves

To be honest I didn't love this one. Maybe it was the sage, but at the same time it was too sweet and cloying. I could try adjusting things to achieve better balance, but I probably won't. First time I ever disliked a drink with Suze in it! Found on IG theeducatedbarfly channel.

QUEEN OF DREAMS

½ oz yuzu curaçao
½ oz Suze
1 oz rosé vermouth
1 oz strawberry-infused gin

Glassware: Chilled coupe
Method: Combine all ingredients in a mixing glass, add ice, and stir. Double strain into a chilled coupe and garnish with a flower if you wish.

Proportions were my best guess based on the mention of White Negroni being their inspiration. An original by Andrew Burton at the Horse Inn. I batched this one up because I didn't want the rosé vermouth to go bad waiting for me to find other specs, and besides.. it's a real summer delight that I'm sure will go quick once I offer it to anyone who comes near my kitchen 🤣

KINGSTON SOUND SYSTEM

¾ oz lime juice
½ oz pineapple juice
1 barspoon demerara syrup
½ oz Suze
1 oz aged Pot Still Rum
½ oz overproof Pot Still Unaged Rum

Garnish: pineapple frond, lime wheel
Method: Combine all ingredients in a shaker with ice and shake. Strain over a big rock and garnish.

Pineapple is a substitute for the original ingredient called soursop. Since that's hard to track down, I just stick with pineapple and added a barspoon of syrup to the recipe. I also subbed the spec's blend of aged pot still and OP unaged pot still by using Doctor Bird OP, which combines the two in one delicious bottle.

The original spec is by Shannon Mustipher and appears in her book Tiki: Modern Tropical Cocktails.
