Prosecco risotto - it doesn't taste as robust as a risotto made with white wine, and has this slightly fruit/floral aspect to it that's really charming.. it feels like a "summer" version of a risotto.

I should know, because I've just eaten pmuch a whole serve of it with a teaspoon while "tasting" it for seasoning 😂

This just came up in conversation. In case you're not aware of it, there's a problem with arsenic in rice, and using a rice cooker isn't good enough nowadays. Making rice has become a little tedious if you want it to be safe, but there it is.

Stirring breaks grains, releases starch, turns it sticky. Let the socarrat form — that caramelized crust on the bottom.

The ratio: 2:1 liquid to rice
Rest: 8-10 minutes after cooking
