Prosecco risotto - it doesn't taste as robust as a risotto made with white wine, and has this slightly fruit/floral aspect to it that's really charming.. it feels like a "summer" version of a risotto.

I should know, because I've just eaten pmuch a whole serve of it with a teaspoon while "tasting" it for seasoning 😂
