Carnival = the perfect excuse to make doughnuts 🥰

We made a big homemade batch… and besides the classic recipe, we added a little mirabelle plum brandy to the dough (yes, really 👀). Honestly, it was delicious.

The result? They’re already all gone… Oops 😅

T65 dough, TH 72, 8g yeast/kg flour, 18g salt/kg flour, first proofing 60 min, divided, resting time 20 min, shaped, then proofing in basket 15 min or 1h10.
The more the proofing time in basket, the bigger and the softer. Bread has very much tenderness.
