My four year old has been obsessed with donuts, lately. Today was my first attempt at making a #LowSugar #HighFibre alternative to my favourite donut; apple strudel donuts. (I love when bakeries have these, because I can tell you I’ve spent many a minute trying to decide between apple strudel or a cream donut. But I’m low sugar now, anyway)
Depending on your perspective, I either succeeded or failed. I made delicious apple fritters that tasted decadent while being very low in sugar and high in fibre (with a bit of #protein for good measure) At a later date, when I have more time, I intend to revisit this idea and create a more true rendition, but this version was good enough for me and simple enough for me to make with my kids today.
Recipe:
Soak 1 cup of light coloured beans overnight.
Add beans to a blender with 1/2 cup of raisins, a nob of butter (or tbsp oil), splash of vanilla, and blend into paste. Add 1/2 cup flour and 1tsp baking powder. Blend until combined.
Spiralise one apple. Gently break into rings. If you don’t have a spiraliser, I’m sure you could make apple rings with a knife, or you could just grate or roughly chop the apple and stir it through the batter.
Add oil and butter (if desired, for flavour) to a pan and heat. Spoon blobs of batter into the hot oil, then add apple rings on top. Turn over once firm, then fry until golden and crispy.
Mix xylitol powder with powdered cinnamon and cardamom. Sprinkle this mixture over the finished fritters.
Serve with whipped cream. I used a small amount of honey to flavour my cream.
