A November 28, 2025 milestone. The shredded carrot fermentation is jarred after nine days on the countertop. The late November fermentation went well without fruit flies or bits of mold making a scene. The recipe is in the Kirsten Shockey “Fermented Vegetables” cookbook. We use this in baked savory muffins and more. @PhoenixSerenity Can Y'all get those Japanese huge carrots there? They are super dark orange and very wide. I have to travel a bit to get them, but so incredible in soups and stews.

@kimlockhartga I've seen those at some farmers markets here. We have quite a lot of Japanese diaspora on Vancouver Island.

@PhoenixSerenity I would imagine so. The San Francisco Bay area has similar demographics.

My SIL, from Oakland, is second generation (Nisei?) Japanese American. She waited 20 yrs. to marry J's youngest brother, out of respect for her parents who wanted her to marry a Japanese American man. They waited that long to have kids, too, so their daughters are much younger than all of their cousins. J's brother is still mad at us for not attending their destination wedding in Hawaii, but that's a whole different story. 😁

@kimlockhartga We have a growing Korean diaspora demographic too. It's mostly due to school & work exchange programs. People do international exchange programs, find they love the overseas places they did the programs at & end up applying to live here/there. Several people also fall in love overseas & move due to relationships.
In the past 20 years, several locals I know have moved to different countries in Asia & they like their lives there more than being here. The high costs of living here is a huge factor for locals who choose to move/live in other countries with lower cost of living.

@PhoenixSerenity that makes perfect sense. I know folks who have moved to Thailand and love it.

I'm really curious about the cultures and seemingly infinite cuisines of so many places we don't get the opportunity to find out about in the U.S. I bet folks would like more variety if they tried more foods. Korean barbecue is very popular, but there is a whole world beyond that.
