Behold, the cherry/blueberry balsamic glaze pork loin!

I stabbed it MUCHLY last night and left it in a brine in the fridge to contemplate its sins, then roasted it slowly at 275 on a wire rack in a sheet pan until internal temp hit 140. Rest for 30 mins, then reverse sear in a hot cast iron pan, before topping with glaze ( https://www.delicioustable.com/cherry-balsamic-roasted-pork-loin-2/#recipe )

I still haven't found the optimal cooking method/temp for whole loin, but this wasn't bad at all. #food #foodie #cooking #pork #meat #foodporn
