Happiness is making a big pot of spicy lentil soup. Its a great winter warmer, full of lovely flavours. Here is the recipe for anyone interested.
400g can of chopped tomatoes.
1 large onion, finely chopped.
150g butternut squash, finely chopped.
80g dried red split lentils.
3 cloves garlic, finely chopped.
20g root ginger, finely chopped.
2 teaspoons garam masala.
Quarter teaspoon dried chilli flakes.
1 litre veg stock.
70g baby leaf spinach, chopped.
10g fresh coriander, chopped.
Sweetener to taste (optional).
Salt and pepper to taste.
1. Put all ingredients except coriander, sweetener, seasoning and spinach into the pan over a high heat. Bring to boil, turn to low and simmer for 15 minutes (or until veg and lentils are soft).
2. Stir in spinach and cook until wilted.
3. Add coriander, sweetener and seasoning to taste.
4. Enjoy!
Adaptions to make it easier, frozen pre chopped veg can be used, same with ready chopped garlic and ginger, just cook it a little longer. I can't finely chop anything, so I blitz it all once its cooked. I don't always have spinach, its absolutely fine without it. I also use a quarter spoonful of dried coriander instead of fresh, I add it in at the start.
The recipe serves 4, or in my case, it serves me for two days.
This goes great with some crusty bread, or cheese on toast. Perfect for those cold winter days, especially if feeling a little under the weather.
