Yesterday I had an Aldi bag salad for dinner with some baked sweet potato.. the kaleslaw one. I add a small tin of corn and some 4 bean mix to it as well, and then sprinkle dried cranberries in it. It's one of my favourite dinners because it takes a small amount of spoons to prep and there's always leftovers for the next day.

I just discovered it also makes a great lunch, on a slice of toast with some salad cream spread on it and then some everything bagel seasoning on top.

I'm not really a fan of kale, but I actually enjoy it in this salad mix.

i am looking to try new low spoon and/or comfort foods for dinner
do you have any recommendations or ideas for me?

criteria:
> affordable
> not super unhealthy
> vegetarian
> as few cooking steps as possible

i like foods with vegetables and crunchy/chewy consistency as well rice and noodles (but pls no pasta recs - i eat A LOT of pasta and sometimes even cooking rice is too mich for me)

i don't like mashed potatoes, anything in that direction or lentils.

ich mag dinge mit gemüse und bissfesten texturen und nudeln/reis (aber davon esse ich schon echt genug und selbst reis kochen ist manchmal zu viel).

am wenigsten mag ich kartoffelbrei, linsengerichte (außer die stadt, die kenne ich nicht /pun) und alle anderen dinge, die in diese richtung gehen

It's pouring rain tonight after a few cold, dry days. This is a great recipe for a cold drizzly night and comes together quickly.

I'd call this a low spoons meal for myself. Very little prep and comes together really quickly. I use hondashi for the dashi, but I use a little more powder than normal to boost the umami a bit. Gyudon is great because you can tweak the broth for it until it's just right for you before you simmer the meat.

To make a vegan variation on this: Scrape the gills out of two large portobello mushrooms and slice thinly.
Shredded oyster, enoki or shimeji mushrooms would also work to replace the meat as well.

Omit the eggs.

Use water in place of dashi, but after simmering the mushrooms, finish the sauce off the stove with about a tablespoon of shiro or aka miso stirred in. Mushrooms are high in vitamin D to fight the seasonal blahs.

Autumn is seriously here now. When it comes I start to crave sandwiches.

Sandwich of the day is:

Grilled smoked cheddar with shaved ham, onions, whiskey marmalade and hot mustard.

Why marmalade? Because it tastes a whole lot like Cumberland sauce. I spread both the marm and mustard on the ham side to hold it in place when I flip the grilled cheese.

The secret to a great grilled cheese is slow and low, so the cheese has time to melt and you don't burn the bread. Also, because of my ADHD I set a timer to remember to flip it, because sometimes I forget and wander off.

Cocoa Mochas (makes 2 large mugs)

3 tbsp cocoa powder
4 tbsp sugar
3 pinches of salt
2 pinches of cinnamon
2 tsp instant coffee or espresso
Water to make a paste of the above
Milk
1 tsp vanilla

Mix paste in bottom of a small
to medium pot.

Make paste in pot (or wetter slurry if using brewed coffee)
Measure milk of choice into your serving mugs, leaving a little space at the top for the extra ingredients. Add milk to paste, stirring constantly. Heat on low until piping hot. Carefully pour or ladle into mugs.
