I like hot cocoa way more than hot chocolate. Hot chocolate feels kind of over sweet and cloying, but hot cocoa feels warming and restorative. Or maybe my audhd just likes the caffeine hit.

Anyways, it's pouring rain today and our whole town smells like a mildew filled tent trailer. Making cocoa mochas to stave off the PNW gray sadness. I use instant coffee I have for baking when I make these sometimes, because it's way quicker, and my friend who is a barista champion says mocha is the best way to hide bad coffee. Lol. You can also use brewed coffee in place of the instant and water.

Cocoa Mochas (makes 2 large mugs)

3 tbsp cocoa powder
4 tbsp sugar
3 pinches of salt
2 pinches of cinnamon
2 tsp instant coffee or espresso
Water to make a paste of the above
Milk
1 tsp vanilla

Mix paste in bottom of a small
to medium pot.

Make paste in pot (or wetter slurry if using brewed coffee)
Measure milk of choice into your serving mugs, leaving a little space at the top for the extra ingredients. Add milk to paste, stirring constantly. Heat on low until piping hot. Carefully pour or ladle into mugs.
