The three rules of gratinating food/dishes:
1. If a dish *can* be gratinated, it *should* be gratinated.
2. If you can still see the dish below the #cheese, add more cheese on top.
3. If you can still see the cheese below the cheese, add more cheese on top.

A while ago I didn't know how to make a kurma. It's one of my favourite dishes, and it isn't often you can find #vegan versions. So I learnt how to make a real kurma. Really nice, but a bit time consuming.
Solution? Buy a kurma paste, read the ingredients, add what's missing, and you've made a kurma that is similar if not better.
I reckon this could be done for other dishes. It's so simple as well. The only hard part is making sure you have the spices and fresh ingredients to repair the recipe. Most store bought pastes just seem to be missing essential ingredients and are never authentic. So I think I'll try this method with other dishes.

I keep three 64oz jars of stock in the fridge. They’re great for making soups or for use in anything that has a liquid base. I use it nearly every time I cook.
The problem is stock is expensive – three dollars or more for a quart.
#Tip: Purchase a rotisserie chicken, bone and skin it, and then divide the drippings, carcass and skin into three freezer bags. Set the meat aside for anything you want to make with chicken.

Can't believe I'm already prepping for Thanksgiving. I'm a pretty below average cook, so the only sage advice I can offer others is this (do I have sage? I think i need sage):
Take a moment to calculate how much various containers in your kitchen hold. Write it down.
Example: My little blue bowls hold 2/3 cups. Two big spoons equal 1 tablespoon.
Now you'll never run out of measuring cups when making a big meal.
