#Enchiladas. Mmm.

I used leftover homemade #carnitas & some white #cheese plus minced #cilantro (sorry, #CilantroTastesLikeSoap people, I love it!). Rolled tortillas in green enchilada sauce, filled them, packed into a 9x13" pan topped with more sauce & cheese, then into a 350° oven until everything got bubbly. Served with more cilantro & pickled #RedOnions. Savory, cheesy, & slightly punchy from the onion & citrus flavors.

Was it "authentically Mexican?" Nope. Delicious? ¡Claro que sí! #chow
