PISTACHIO MAI TAI

¾ oz lime juice
½ oz falernum
¼ oz orgeat
¼ oz SC Mai Tai syrup
2 oz Blended Aged Rum ❸
float ½ oz Strato pistachio distillate

Garnish: spent lime shell, mint sprig
Method: combine all ingredients with 12 oz crushed ice in a cocktail shaker. Shake until a frost forms on the shaker and pour the entire contents into a double old-fashioned glass. Garnish with the spent lime shell and mint sprig, arranged like a tree on a little island.

My late entry for Mai Tai Day 2025 :) The Strato is a really delicate spirit with low sugar content that provides a pillowy-soft nutty flavor when floated, elevating the orgeat. The rum is a blend as follows:

- 1 oz Hampden Estate 8yr
- ½ oz Doctor Bird
- ½ oz Clairin Le Rocher

NAVY GROGU

¾ oz lime juice
¾ oz pineapple juice
¼ oz SC Mai Tai syrup
a few drops of blue curaçao
¼ oz allspice dram
¼ oz falernum
1 oz overproof Pot Still Lightly Aged Rum ❶
1 oz Rhum Agricole Blanc ❼

Garnish: lime wedge, maraschino cherry
Method: Combine all ingredients in a shaker with ice. Shake, open pour, and top with more ice. Spear two cherries for the eyes, and use two lime wedges as your garnish so it looks as if the Force is strong with this one.

CAFE DE CALABAZA

1 oz orange juice
2 oz pineapple juice
1 oz coconut cream
¼ oz allspice dram
¼ oz cinnamon syrup
¼ oz falernum
¾ oz espresso liqueur
1½ oz mezcal espadín

Garnish: pineapple frond, cinnamon stick, grated nutmeg
Method: Combine all ingredients in a shaker with crushed ice, shake, and open pour into mug. Garnish with love.

It's pumpkin spice without the pumpkin! Although this type of cocktail normally makes its rounds in the fall, I still love to reach for something like it when winter stubbornly marches on. The color is nothing to write home about so I threw it into my handmade False Idol mug by Bosko. Cocktail is originally by Brian "shakerofspirits" Maxwell.

THREE DOTS AND A DASH

½ oz lime juice
½ oz orange juice
½ oz honey syrup
¼ oz falernum
¼ oz allspice dram
1½ oz Rhum Agricole Vieux ❽
½ oz Blended Aged Rum ❸
1 dash Angostura bitters

Garnish: three maraschino cherries, pineapple chunk
Method: Add all the ingredients to a drink mixer tin. Fill with 12 oz crushed ice and 4-6 agitator cubes. Flash blend and open pour with a gated finish into a footed pilsner glass. If you don't have a drink blender (I don't) then shaking obviously does the trick.

For the garnish use one spear for three maraschino cherries and the pineapple chunk. Place horizontally on the rim of the glass. It represents V for victory in Morse code •••—

This drink is a certified tiki classic from Don the Beachcomber during WWII, later decoded by Jeff Beachbum Berry, and republished in the Smuggler's Cove book, page 43.

Pineapple Old Fashioned

2 dashes bitters
½ oz pineapple demerara syrup
¼ oz falernum
½ oz Pot Still Lightly Aged Rum ❶
1½ oz rye

Garnish: dehydrated pineapple
Method: Stir and strain over a large rock.

The other day I made some pineapple demerara syrup, and a few hours after bottling it I saw this spec from @boozyANDsour! It's a true delight. I reprinted the spec as-is, but personally I go heavy on the rum and lighter on rye. Recipe for syrup at the second link:

2 oz sparkling wine
¾ oz lime juice
½ oz orgeat
½ oz blue curaçao
½ oz falernum
1½ oz Tequila blanco

Method: Pour the champagne into a chilled coupe. Add the remaining ingredients to a cocktail shaker and shake with cracked or cubed ice. Double-strain into the chilled coupe.

The Undead Gentlemen

1 dash absinthe
½ oz lime juice
½ oz grapefruit juice
½ oz SC cinnamon syrup
½ oz falernum
1 oz Black Blended Overproof Rum ❻
1½ oz Blended Aged Rum ❸
1 dash Angostura bitters

Method: rinse glass with absinthe, shake remaining ingredients, strain into chilled coupe glass.
Garnish: lime twist, grapefruit twist

Another one from the Smuggler's Cove book, Martin Cate says this is a "refined" take on a legendary tiki classic, the Zombie. Funny enough the spec is actually more like a Jet Pilot than a Zombie, but they both have a lot of overlap to begin with.
