"Both baking powder and baking soda can play a role in giving baked goods their bubble-filled texture and taste. They are sold side-by-side in the supermarket, and have similar uses. But what’s the difference between them and how can we use those differences to our advantage?"

Paleo Baking Powder

This paleo-friendly baking powder is made without cornstarch. Straightforward to bring together, it requires just a few pantry staples. Since it’s single-acting rather than double-acting, it works best with baked goods that will be baked immediately, rather than those whose batter or dough is refrigerated or left to rest for awhile.

Likely Today - Whats new today?

I got delayed on this post when I realized that I had no idea what a #medieval #baker used in place of #bakingPowder. It turns out it's "#hartshorn", which is actually the horns of male red deer, dried at high heat and then ground down to a powder.

The ammonia that's part of the active ingredient wafts away during the cooking, making your #kitchen smell terrible. For the few #baking products that still require the airy #leavening it produced, modern bakers use something called #BakersAmmonia.

#bakingpowder

Managed to whip up another batch of #sodaBread #biscuits today, this time made with #buttermilk ¹ rather than regular whole milk, but still with #bakingPowder instead of #bakingSoda.
Again a mix of 1 cup of plain flour, ½ cup wholegrain flour and ½ cup of rye flour.

Half of the batch got mixed with finely diced apple, coated with cinnamon and sugar.

#Dutch #Boerencake #poundCake #recipe:
Mix 250gr of #butter (I cubed mine before using a handmixer) with 250gr plain white #sugar and #vanilla (I probably added about 2 heaped teaspoons of vanilla sugar) till the butter turns kinda white and smooth-ish.

Mix 4 #eggs in, one at a time.

Mix in 250gr of plain white #flour and about a teaspoon of #bakingPowder till smooth.

Mix in 60ml of milk.

Line a breadtin with baking paper and/or butter and add the mixture.

Put in 160°C oven for ±45 minutes.
