@ZachWeinersmith This is generally true except for the recipes (baking, usually) where the ratios are extremely important. Too little cream of tartar and the texture will be wrong, too much and it leaves a bad taste.

Brain Stew (Idris)My youngest, B made vegan croissants, had a few problems and didn’t expect much. They turned out so well, nice and airy too.
There’s a Pyrex with bits they gave up on, but even they look amazing. I’m trying to get them to top with cheesecake filling, and chocolate and nuts, or fruit syrup.
I think I’m asking too much for a vegan, gluten/nut/soya/nightshade/gfoats/gums free version 🤣

Loaf is just a little bit less aerated but is also soft and crumb smells also good.
