I’ve recently come across the Fork Ranger website (and app) which is about explaining the carbon footprint of our food. Every day there is a new factoid you can learn about and once you’ve looked at that there is a new recipe to try out as a reward. I find it quite interesting to learn about the pros and cons of our food choices and it only takes a couple of minutes every day.
One of the presented recipes was this Garlic Lime pasta. Apart from the more obvious aubergine and broccoli there are not only garlic and lime juice but also peanuts and chilli flakes in it; not necessarily everyone’s cup of tea, but it sounded intriguing enough for me to test it out.
I chopped my peanuts as I prefer them that way - and I think I slightly overcooked the peanut/garlic/chilli mix (as it suddenly looked quite brown) by underestimating the heat generated by my new frying pan. All in all it was fine once the soy cream went in. If I did this again I would probably add a ladle of pasta water to get a creamier sauce but my guys were happy enough with it.
