After our lengthy threads yesterday about #banchan, #kimchi, and #fermentation, I managed to get 2 styles of cucumbers made. One is 오이무침, seasoned Korean cucumber, and the other is fermenting spicy dill pickles, made with the last of my kimchi brine. Pretty sure I added way too much salt to the first, and too many Alleppo chili flakes to the second, but I'm more likely to eat these than plain old cukes, especially in the quantity I received.
Today is also meant to be #borscht day, but I'm struggling with vertigo, so I've been watching #kdrama (Sh**ting Stars) instead.

My father inspired my love and passion for cooking and exploring food, so when the anniversary of my father's passing comes around, I always try to celebrate his memory by cooking and sharing meals that he would have enjoyed and remind me of him. One of my father's most favorite meals was Korean BBQ. So yesterday, @sebalicious and I made the most delicious vegan bulgogi and banchan and watched the Ranma ¹/² reboot (possibly the first anime my father introduced me to). I think dad would have been pretty proud of the beautiful spread and would have absolutely loved to help us demolish it all. 💙💙💙
