Vor einiger Zeit habe ich eine Portion Kimchi angesetzt (aus Chinakohl, Frühlingszwiebeln, Lauch, Schnittlauch, Ingwer).
Zwischendurch habe ich ihn ab & zu mal kurz gelüftet, damit er nicht explodiert.
Heute war dann der Tag der Wahrheit und ich habe probiert. Der Kohl hat noch Biss und alles hat eine gute Säure. Bei der Schärfe habe ich auch ein gutes Mittelmaß gefunden, trotzdem war ich froh als ich eben Joghurt zur Hand hatte. 🥵 Ich hatte ein Gäbelchen pur probiert. 😂 #kimchi #koreanfood

宗家キムチおいしさこだわりキムチ

昨年韓国ソウルへ行った際、あちこちで食事をするときに必ずと言っていいほど小皿がたくさん出てきて、そうするとまずもれなく載っているのがキムチでした。これらの小皿は「パンチャン」と呼ばれるそうですが、キムチの他にナムルやチヂミ、韓国海苔などが載っていて、しかも基本的に無料でお代わりできるというものでした。それらのキムチは店ごとに味が異なっていて、キムチの種類も白菜の他に大根、きゅうりなど色々あって、それだけでも楽しめました。

私も以前は辛いものが苦手だと勝手に思い込んでいて、キムチも避けてしまっていたのですが、何かをきっかけにむしろ辛いもの好きになった今はもったいないことをしていたものだと思っています。今はたまに自分でキムチを買って食べたりもしているのですが、私が気に入っていつも買っているのは宗家キムチのおいしさこだわりキムチというものです。

日本ではキムチと言いながら、実際にはキムチ風の浅漬けのようなものもあったりして、そういうものに当たるとがっかりさせられてしまうのですが、この宗家キムチのものは韓国企業なだけあって本格的なもので、魚介の旨味がたっぷりで、とても濃厚な美味しさがあると思います。また、購入してから時間とともに味わいが変化するのも面白いところです。徐々に酸味が増していくので、自分が特に好きなポイントというのがあるような気がします。

韓国の人は自分でたくさんのキムチを漬けていて、普通の食品用のほかにキムチ専用の冷蔵庫も持っていることが珍しくないそうですが、日本の普通の人にはなかなかそこまではできないでしょうから、こういう宗家キムチのような美味しいキムチを見つけて楽しむというのが現実的なところでしょうね。でもちょっとエスカレートすると自分で漬けたくなってしまいそうな気もしますが…

I was eating way too much junk food. Gained so much weight I feel really uncomfortable during hot weather. I am going back now to the foods of my childhood and of the time I had a real kitchen 😅 and cooked every day.

Today 밥하고 반찬, plain rice and banchan.
