Since I really need to stop eating lettuce in all of its delicious forms to save myself from gastrointestinal agony...does anyone know any good non-green lettuce based salads?

Bonus if it Does NOT have uncooked paprica, tomatoes, or chick peas in it.

Lentils are good. Especially the red ones.

Found some fancy Arborio rice so pulled out an old #recepie and grated some parmigiano reggiano.

Leek & mushroom sautéed, rice, garlic, slowly add hot chicken stock, reduce 20m, remove from heat, stir in spinach, some cheese, butter. Give it a few minutes to come together.

Bowl, top with remaining cheese, black pepper, fried sage.

A grandma would insist I didn't reduce this enough, or added too much broth. I'm not that old, and I like my risotto soupy.
