"I swear that there is shrimp in there!" Shrimp and Veggie Thai Red Curry with Cardamom and Anise Infused Rice. This rendition of Thai Red Curry is my absolute FAVORITE so far! You may not be able to see the big and juicy shrimp that was in it by the picture but it was definitely in there and it was AMAZING! Slicing the carrots into ribbons was an excellent and fun choice (will totally be doing it this way in the future), and the infused rice really elevated the already incredible flavor profile of this dish to an out of this world level! Might need to make a batch of the infused rice alone to try and make a festive rice porridge out of it, because @sebalicious and I agree that by itself it tastes like Christmas! 15/10 will be making this one again!

Seriously. I just whipped up this dhaba-style paneer masala using the fresh paneer I made this morning and twenty minutes after finishing the last bite, my tastebuds are still singing like a choir, all these flavor notes! This is one of the tastiest curries I’ve ever had. I spent every bite with eyes closed and eyebrows lifted in wonderment, shaking my head slowly in disbelief, it was that flavorful!

Paneer:
*Whole-fat milk
*Lime juice (My curdling agent of choice.)

Paneer Marinade:
*Chili powder (I used Pakistani chili powder for deep, earthy heat)
*Turmeric powder
*Garam masala
*Ginger-garlic paste
*Salt

Homemade Dhaba-style Masala Powder (whole spices toasted and ground into a powder):
*Cloves
*Cardamom pods
*Cinnamon stick
*Coriander seed
*Cumin seed
*Fennel seed
*Salt
*Whole pepper corns 🤤

Gravy:
*Oil tempered with whole clove, cardamom, bay leaf, cloves & cinnamon stick.
*Fresh tomatoes
*Onion
*Garlic (My idea. I threw in 3 for good measure)
*Garlic-ginger paste
*Chili powder (For this I used Kashmiri mirch since it’s milder and won’t overpower the other flavors, but still adds a bright, festive red color.)
*Turmeric
*Salt
*Dhaba-style masala (listed above)
*Plain unsweetened yogurt (whisked)
*Kasuri methi (fenugreek leaves)
*Garam masala
*Fresh cilantro leaves
