Once again, about a month since the last batch, it's time for garam masala! Kid1's pounding this batch!
One trick I learned when toasting spices is that thin coriander seeds toast fast, burn and get bitter, so best to add later on after heat is off, it'll toast in the residual heat.
Recipe for this as in thread below. Tonight's batch includes 1 g of ajwain and 2 pinches each of dried basil & oregano, ½ pod star anise

The whole story traces back to one book. In 1939, a scientist named J.C. Drummond published The Englishman's Food and suggested that medieval recipes were so heavily spiced because the meat was frequently tainted. No evidence. Just an assumption. One sentence in one book published 85 years ago.

Got some minced beef on sale so decided to experiment with flavors by combining gochujang, honey garlic sauce and some soya for the beef. Along with some ginger, various frozen veggies for more filling and fresh broccoli.
Pairing with rice this time.

Even broke out my wok again to stir fry in. Tastes very nice, but could use a bit more sweetness/honey. Tingles in the lips so spiciness is spot on.
