I've been on a 2-month pad thai binge and I have tried about eight different restaurants (we are blessed with many! ❤️ ABQ).

One thing I have discovered is this, if they don't let you choose the spice level on the menu, your Pad Thai is going to suck. 😂

No coincidence that the two places that offer at least five different heat levels also use the best ingredients and don't oversauce the noodles or make them too sweet. Spice fiends and foodies are tight 🤞
