Today we have a small but mighty 'fake fat' delight... Pasta alla Panna with Crispy Speck from "De Vegetarische Slager".
The vegan cream is by Alpro. I prepared a garlic, oil, and chili base, and made the vegan speck super crispy near the end. Added the cream and some vegan ParmGiano, a splash of pasta water, and the creamy texture is guaranteed !!!!

Don't let the unique color fool you, this is an absolute delight in the mouth! We gently sautéed thyme, rosemary, and garlic until golden, then added a jar of lentils, a small potato cut into blocks to thicken the soup, half an IPA beer from Brouwerij 't IJ, and water. Simmered for about 20 min. Seasoned with extra virgin olive oil, salt, pepper, and a handful of Vegan 'Parmagiano', then blended to creamy perfection. Served with a fresh drizzle of olive oil , sesami & chili

"Zero Frying" Magic: Barley Pasta Tortino allo Zucchino!

A delicious Barley Pasta Timbale by Rummo with zucchini and a "crème brûlée" style vegan cheese crust. Super light method: instead of a classic sauté, we seasoned the pasta water with zucchini concassé, oil, garlic, salt, chili, rosemary, fennel seeds, and a spoonful of olive oil.
Once drained, we creamed (mantecato) it with vegan "parmagrano", plated it in a ring, and torched the top with smoked powder and smoked almonds.
No fried oil, super light and just pure flavor!

Truffled Mushrooms to the Rescue! 🍄

Dealing with a gloomy, painful day called for some extra comfort (and a side of prednisone & THC oil). Today's main is a Vegan Spinach Rondo by VitaViva. To be honest, I found it a bit dry, but it was completely saved by a topping of red onions and truffled mushrooms! Served with boiled cauliflower seasoned with salt, pepper, and oil, a fresh arugula salad with vegan cheese chunks, and a zesty homemade mustard sauce. Everything was delicious! The Rondo wasn't my cup of tea, but the toppings worked magic.

From Bari con furore: Spaghetti all' assassina

A fantastic dish with a unique method! 🍅🔥 Spicy tomato pasta where spaghetti are added raw directly into the sauce. Cook until reduced. Result? Incredible textures: soft, fried-crispy, and charred. I added a splash of water now and then (sorry to the Bari chefs if that's not strictly traditional!), but they were delicious. 100% PLANT-BASED!

Discipline & Creativity: The 420kcal Magic Bowl!

In 2024, I took on a weight loss challenge. I started weighing everything and counting calories. In 11 months, combining this diet with warm water therapy 3 times a week in a heated pool for people with rheumatological pain, I managed to drop from 120kg to 93kg!

Unfortunately, excruciating pain forced me to stop to go to therapy bath, and shortly after, I stopped the diet too... Shit happens... rheuma too..

Today's plate is just 420kcal: A Quinoa and Mixed Bean Salad with Hummus, 'Magic' Broccoli Sprouts (fabulous for slimming down and "sport"), and Fennel Salad. 🥦

The trick to my dishes? The right balance of fiber, which fills the stomach but takes energy to digest , burning calories while you digest and the right carbs to give you the energy to move. 👨‍🦽‍➡️ 🏃‍♀️‍➡️

No Bun? No Problem! The Portobello Naked Burger

Portobello naked burger, fennel with flax seeds, and iceberg salad. Two large portobellos stuffed with smoked vegan cheese, red onion, chopped stems, garlic, oil, vegan cream cheese, breadcrumbs, and pecan nuts. Grilled fast on high flame for 2 mins per side, topped with sesame seeds. All the taste, no bread!

A delicious vegan Bratwurst by De Vegetarische Slager, grilled to perfection with garlic, onion, rosemary, and sage.
Served on a bed of mixed vegetable ratatouille, lightly spiced with cumin and rosemary.
Accompanied by a rich sauce reduced from the Bratwurst's aromatic oils, enhanced with sage and Kikkoman soy sauce and sprinkle with vegan Parmesan "cheese'. A true bomb of flavors and delight!
