Notes from all the times @scremlin has made this:
You CANNOT skip the Thai basil OR the kafir lime leaves. They are required. Skipping them will result in bland curry.
Also, you have to use REAL FULL FAT coconut milk. (see Pai's notes on coconut milk) I recommend Aroy-D brand coconut milk because it's easy to find in most asian grocery stores in the USA and NL. There are a few other brands that have full fat coconut milk, but absolutely do not buy the western grocery store brand coconut milk.
Aroy-D is probably also the brand of green curry paste you want to use, as it's vegan. Do not use a western brand of green curry paste. It will be too bland.
We skipped the bamboo shoots, because we can't get anything remotely fresh or decent around here in NL, and it always tastes off, no matter how much I wash them out of a can.
I highly recommend getting puff tofu for this recipe, because it will absorb the curry flavors really well. This is also great for anything else that is that does that, so zucchini is perfect!
