In case anyone wondered about making a vegan version of pastina al formaggino, Good Plant's smoked gouda wedges did melt pretty well into the pasta water. I used 2 with 100g of stelline.

Also, the recipe recommends sprinkling more parm, do that!! I have been using their parm recipe for years, it's really good!
