I know that i cerainly overfermented this with 10% levain in a 23 celsius degree kitchen for over 11 hours. But then i put it right away into the fridge after shaping without giving it a moment to reboot proofing. After 8 hours in the fridge, i baked it and it came out like this. The crumb on the Guinness loaf is honestly perfect imho. It's exactly what I want from a sourdough loaf. It's just a basic sourdough recipe but I've replaced all of the water with Guinness.

The crumb for the olive, cheddar and lemon zest loaf is no slouch either, it just didn't get quite the height which is understandable!

Today’s bread is a sesame loaf with a bit of rye and whole wheat flour mixed into the bread flour, very flavorful. I’m very happy with the rise on this one and the texture is great.
