Abendbrot.

60-Stunden-Brötchen nach Marcel Paa.

Einfach den Teig kneten, bei Raumtemperatur anspringen lassen, ein paar Mal dehnen und falten.

Danach wandert der Teig für 60(!) Stunden in den Kühlschrank.

Die Teiglinge werden mit einem Rundstab abgedrückt. Da hätte ich noch etwas mutiger sein sollen. Dann sehen sie auch aus wie ein "Kinderpopo"… ;-)

Ansonsten geschmacklich eine Wucht!

Today’s #dinner was simple, some #soup I made from both shop-bought and home-grown #vegetables, with #potatoes, #carrots, including our own #GarlicChives and #SpringOnions. I added some #GreekYoghurt, a little chopped #Chillies and some #ChineseVinegar to add a bit of tang and it tastes great, particularly with some of my wife’s home-made #Sourdough #FlatBread.

Out of the oven - multi-seeded sourdough using a Tartine levain, 15% scalded home milled Spelt wheat, 5% scalded home milled cracked black wheat, sage, Szechuan pepper, lemon zest, 80% very strong white Canadian flour and 70g mixed seeds.
