Pretty much every day for lunch, I cook a simple noodle soup. I like to add some chicken bits, and it's usually cooked chicken hearts (my Woolworths has them).
Today I found myself without a heart, and at Coles (for reasons) which does not stock chicken hearts but does stock gizzards, same price of $3.75 for 500g. So I got them instead.
The tricks with gizzards are: you need to clean them out as their purpose is grinding grains between small stones and there *will* be bits there; and, they are very tough muscle meat so they need a bit of cooking. NB this is why I say not gluten free, it's hard to really clean all the bits of grain out, even cut up.
Anyway, I cut them into pieces, rinsed each piece well, and cooked for 25 minutes in a pressure cooker. Drained, cooled, laid on a baking tray in the freezer for 30 minutes, packed into a 500ml storage box. As a bonus, about 700ml of good chicken stock (but also likely not GF).
5 pieces into today's soup with about half the stock, very nice tender chicken with a bit of an offal taste. Great with the noodles, soy wadi, wakame strips, chili paste, and Maesri Namya paste (the one with fingerroot).
