Today we picked up our meat from the local butcher and vacuum-sealed about 60 pieces: fillet cutlets, roast, goulash, osso buco. The ground meat, ribs and bones we packed in ordinary bags. The yield wasn’t particularly high for a one-year-old calf, but the quality is excellent. It was aged for 13 days.
From a global perspective, it’s better to avoid eating meat (since factory farming consumes a great deal of resources and is harmful to the environment). However, meat can also be produced in a more sustainable local way. Finally, meat again. Grateful for this luxury.
