Kimchi is just one of the greatest culinary inventions on this planet. The first batch of the new year - cabbage, carrot, apple and gochujang. And 4 days of #lacto magic!

The "pickle factory" is in full swing.

Though unfortunately my first jar seems to be bad, unhappy aroma, odd taste, and if it doesn't taste nice it goes. (I am the taste tester lol, if I am horribly ill we will know not to eat those pickles... though TBH I think the smell alone rules those ones out. I only nibbled a tiny bit, which I spat out.)

I make all these at 2% salt by weight (solids + water).

The established three are filtered tap water with some "Himalayan pink salt", the latest one at the bottom is bottled Co-Op water with Maldon sea salt. I pretty much always add fresh dill if I have it, some chilli, and some garlic... I like the garlic in there but it can also produce concerning aromas πŸ˜‚

The #sauerkraut is ready! Red #cabbage, carrots, touch of juniper & caraway. 3 day warm #fermentation, then in the cool place for a week or so. #lacto

I might combine all the orangy coloured ones I to one orange #lacto #ferment #chilli sauce. Varieties are Madre Vieja, Aji Mango, Big Sun Habanero, and Orange Drop.

And I think both the "stripey" varieties (Tangerine Tiger and Sugar Rush Stripey (not very, not hot enoigh?)) will make good sweet vinegar #pickles.

We have tackled some this evening.

I've done another jar of #lacto #fermemt cucumber, with fennel, allspice, and half a Wraith chilli.

I've also done two vinegar #pickles - a large tub of padrons, and a jar of cut runner beans. This has fennel, coriander, black pepper, bay, and garlic, plus the other half of the little Wraith.

Kat has semi-dried some black cherry tomatoes and submerged them in EVOO.

This was done before I took the previous photos. Barely made a dent. πŸ˜…

More ferments on the go.

We have sweet cicely, garlic, and chilli zucchini strips and dill & shallot purple beans (which won't stay purple of course). Both sourced from both the allotment and bogalow garden.

Sadly lack time to do as much preservation and freezing as is needed to keep up with current produce gluts! Trying.

Dealt with some runner bean glut.

The tall jar is with garlic and Genovese basil.

The two small jars are with Thai basil, garlic, and chilli. The one with the purple beans (which won't stay purple alas) also has some ginger.

This is a 2% salt #lacto #ferment.

A channel documenting Kat and Yvan's fenland allotmenting shenanigans in West Norfolk, United Kingdom (sorta like USDA Hardiness Zone 8b). We're here to show what we're up to, certainly not to claim any expertise β€” sometimes things we do go wrong, sometimes they work out. The postcards are a vlog of sorts, a missive mainly to family, but also anyone else interested. Documentary rather than instructional. We may also post videos that document specific things we do in a bit more detail, these may be "how we grow" style or "something we built" style. Sometimes videos may be at home where we raise most of our seedlings and also have access to a small greenhouse on the shared grounds of our rental property as well as have one raised bed and some other planting spaces we use.
