Here is a hack to get a consistently fermented idli/dosa batter, even in winter: put it in the instant pot overnight on the "yogurt" setting! This winter I will try this with sourdough bread dough. Overnight would be probably be overkill for that one, but a few hours?

Used half the 4 lb tub for brunch for steamed #Idli - and partner made some quick coconut chutney for it, and we had various milagai podi ("gunpowder") from India. Aaah! The thing I think I cracked this time is cooking time and amount to put in the mold. In the instant pot, I need to warm the water on the sautee setting, then put in the stands, then set to pressure cook for 1 minute and separately set a timer for 10 minutes. After the 10 minutes are up, at which point the 1 minute steam will be done, manual release the steam. Then wait a moment to take them out of the molds. #cooking #food #idli
