But because I can’t help myself, I did a few changes - both cakes, i converted to tangzhong (longer shelf life, better texture). The first one I also went brown butter & alllllll cinnamon. The second, i think superior, i only used the lemon & nutmeg in the dough, and for the filling i streamed in sweetened condensed milk (got the can open for icing anyways, right?) and used that to adhere the cinnamon. This is the superior way!! Very distinct layers resulted.
