Our fourth and last course: Dessert! My wife got a dish called Baked Bayley Hazen Blue which is a sourdough brioche, with fig, orange, and caramelized honey. I got the pistachio strudel. We also got this little dessert tray, and as a thank you gift: Lemon poppy seed bread.

The third course: Filet mignon and Alaskan Halibut. So my halibut dish had morel, something I’ve been afraid to try and turns out I enjoyed the nutty taste! The place starts to really look beautiful once the sun starts to set.

Our 1st course at Flagstaff House: Maine Lobster Soup, Ahi Tuna. I don’t remember exactly what other ingredients were in the ahi tuna dish, but it was an assortment of flavors I’ve never experienced before.

The 2nd course: Monkfish, and Quail.

As a way to celebrate my wife’s massive promotion at work, last night we went out to a lovely dinner at Flagstaff House, a restaurant nestled in the mountains overlooking Boulder, CO. Sadly couldn’t get a window seat, but I did manage to get some photos of the place!
