So, long story short I'm a terrible baker and somehow I agreed to bake my wife a croquembouche for her birthday, possibly one of the most complex dishes out there (somewhere in the range of 6-8 hours of effort). My wife enjoyed several glasses of prosecco and invited a bunch of friends over to mock me in the kitchen as I fumbled my way through the recipe (the peanut gallery was part of the deal; I didn't mind).

Let's be real, this thing looks TERRIBLE and that's mostly because the shoux pastry didn't rise (apparently I added too many eggs) but let it be known that I absolutely nailed the custard and the caramel, way above everyone's expectations. It tastes great too (mainly because of the custard).

"You know, he was one egg away from making a proper croquembouche, god dammit" - my wife, half in surprise and half in disgust
