1kg sourdough bread made with SBF, flaxseed meal (7%) and chickpea flour (7%). Two preferments are used: one with Lievito Madre and the other with rye sourdough. Cold proofed for 18hrs. Actually one or two hrs more or less doesn’t make a difference but provides flexibility when baking different breads in a day.

Trying to use easy available but low protein AP for Baguette 🥖. Reduced the water very much - still dough was difficult to handle. Outcome not too bad. For couch and on bench I used “roasted” milled lievito madre powder.

Using up “leftover” #RotKornWeizen , a wheat heritage grain, mixed with wholemeal spelt to have enough flour. Unfortunately enzyme activity went crazy during proofing, so I baked it earlier than expected. It flattened but result is much better than I feared. And taste is gorgeous.
Sourdough baking can be very exciting and sometimes unpredictable, but with a little experience one knows how to react.

Trying a new oven in baking my favourite rye sourdough bread rolls. Vinschgauer Paarlen, made with wholemeal rye, a little wheat and bread spices. Yummy with hearty toppings but also with sweet and of course only butter can be great.
