FermentatorDear peeps and peepolini! I've just found a #recipe for #tomato #soup to get rid of all the left over #shallots lying around in the kitchen and cellar. Which in my case is a lot, about 400g- all the recipe asked for. They're caramelized (or fried over low heat with a heavy lid), then you throw in the matoes, repeat the low- and- slow, puré, salt,, worcester, (water down to taste), done. Peeling and slicing 400g of shallots takes quite some time though. Delicioso it was, and #vegan, of course.

Definitely worth to invest in local Thai tamarind paste (I used Suree but there's others) as the taste difference with 80% tamarind vs supermarket brands like Tesco is huge. Thai tamarind pulp sold in blocks is supposed to be even better ...
