#vegan #healthy Y’all! Couple of weeks ago, I’ve had my first ever rice noodle Thai salad- 🥗 a revelation!
Since then, I’ve been looking for decent recipes, until finally finding the one below.

Added sliced 🥕, crushed roasted 🥜, left out the 🌶️.

Cheap, easy, filling and just delicious. The family’s carnivore even forgot he still had some meat on the stove, just ate his fill with 🌱 based stuff.
He’s really getting strange in his old age.

Wanted to make plant based carbonara. Turned out to be more carbolognese- still awrsome. I was supposed to take soaked cashews as base for the sauce, but recipe says, can sub with 🍄‍🟫. Guess what I had left over- so the sauce was pretty ugly, but hugely tasty!
And no shroom consistency.
Smother the spaghetti in pancetta- style tofu and cashew- parm, a spritz of hot sauce- perfection!
I think I’ll have my third helping, just so there aren’t any leftovers.

2/2 you can get the metal containers pretty cheap at Ikea. They’re made in China, so I’m still supporting slavery- but at least it’s a once in a lifetime acquisition. ‘Right’ choices aren’t too easy, it seems.
Once you get cooking, you can nearly pile up the containers, so there’s virtually no chaos in the kitchen afterwards.
It really is way more relaxing, and I no longer tend to forget any key ingredients.
