It feels like a good day to roast vegetables again.
This round:
Sweet Potatoes, Purple Onion, Red Bell Pepper, Yellow Potatoes, (Precooked) Sausage and Mushrooms (White and Baby Bella).
If I have them, I also like to peel some cloves of garlic. I'm not sure what else I could throw into the mix.
I line the 9 x 13" pan with aluminum foil and generously coat it with olive oil spray, which makes it easier to toss / mix while cooking.
I mix/toss them with Tony Chachere's Creole Seasoning, olive oil, black pepper, Himalayan pink salt and some melted butter.
I cook it in the oven at 425°F (218°C) for 45-50 minutes, taking them out and mixing them up every 15 minutes or so.

Christmas Eve Vegetable Roasting.
I bought a five pound bag of red potatoes, a five pound bag of yellow potatoes, a bag of red & yellow bell peppers and a bag of green bell peppers at Aldi. I figured I'd try them out.
I roasted veggies twice, changed things up both times. Carrots and red bell pepper yesterday. Sweet potatoes and green bell peppers today. Everything turned out good.
The recipe at the end was updated to reflect my time change to 45 minutes at 425°F since I add more veggies than I did before. Everything shrinks a bit when cooking. Carrots also seem to need a little more time to soften to my preference.
