Haven't tried to make an 'Italian meringue' before, so I'm trying one of those to top off a lemon meringue pie. Just something for a change.
It's the meringue where instead of just whipping egg whites and sugar together, you whip the egg whites, then slowly stream in boiling sugar syrup.
