There used to be a restaurant chain called The Ground Round, and in addition to holding our chess club meetings there in the 90's, they used to have an Apple Crisp dessert which was delicious. I think I have faithfully recreated it at home, and that makes me very happy.

Yesterday I turned a bunch of aging cosmic crisp apples into a lovely and delicious "apple crisp" dessert. I had commented to my wife @u2katrina.bsky.social last week that the apples were starting to age* and that I would figure something to do with them. She suggested some kind of "apple crisp casserole". She also asked that the crisp be somewhat like the crumble I make from left over key lime pie crust ingredients.

Two apple cheddar crisps, one for the freezer. The 4 quarts of sliced apples that rested overnight were divided, grated cheese and the topping added and baked for an hour or so since the apples were cold.
