Very pleased with the bread that I baked this morning, my Mediterranean bread.
It has pulled open beautifully, where I scored it. This is not always guaranteed with sourdough bread that contains a lot of wholemeal flour.

This bread is inspired by the #Greek #Horiatiko - #Χωριάτικο #ψωμί - and also southern #Italian breads, such as the #Pane #pugliese.
There seems to be a geographic theme here, southern #Adriatic and northern #Ionian - and it is a beautiful part of the world.

Many of my breads are created over three days, which involves exciting things, such as sourdough, poolish, pull & fold and long overnight fermentation in the fridge. This way I can always have fresh bread in the #morning for #breakfast when I bake (twice a week). #SundayMorning
