Finnish-Lippish crossover (part 2 of a bread trilogy)

After harvesting 620 kg of rye, we now have to start thinking about what to do with it. Having already baked Finnish round bread and offered it to the corn spirit (the rest is currently drying on a pole at Abramsgården), we decided to complete a bread trilogy. Using Finnish flour and straw from our field, we additionally baked Lippe straw rolls from Philip's hometown of Lemgo and a speciality from Peter's hometown of Mönchengladbach, an Onjeschwedde (more on that in a separate post soon).

The Lippische Strohsemmel, also known as Lemgoer Strohsemmel, is a culinary speciality from the town of Lemgo, although it is not only produced there but also in other places in Lippe. The recipe for the Strohsemmel is said to have been brought to Lippe by a soldier and baker's apprentice from the Napoleonic campaign against Russia in 1812. He had baked rolls as provisions for the troops and, in accordance with Russian custom, blanched the pieces of yeast dough to ensure a longer shelf life. As he did not have a baking tray, he used a layer of rye straw for baking. The Lemgo master baker Kracht succeeded in acquiring the recipe and the manufacturing rights. Initially, the recipe was kept secret, but by the middle of the 19th century, Lippe straw rolls were being sold in several towns. Even today, the Lemgo straw roll is still very popular, not only in Lippe, and is eaten with Mettwurst sausage, ham, honey, jam or butter. (Wikipedia).

The first bread belongs to the corn spirit.

For various reasons, the harvest of our rye field had to take place without us. So we were all the happier when we arrived in Vörå and were handed the first few kilos of flour, ground from the rye grown on our very project field. Philip, who always carries all kinds of ovens with him, set up his mobile baking oven and, together with Peter, our host, they baked traditional rye bread, which will later be hung up to dry. We offered the first loaf to the corn spirit*. For a good harvest in the coming year. It is now hanging on a pole in the field and we are waiting for the spirit to come and take it.

Of corn spirits and other creatures

In our last performance as part of our project in Vörå (Vöyri), we explored the significance of the so-called corn spirit (or: grain spirit) in harvest traditions. In both Central and Northern Europe, people were afraid of upsetting the corn spirit and thus risking poor harvests. After the harvest, sacrifices were made to appease the spirit.

No one had ever seen it, but people were certain that it roamed the fields in various animal forms. We reinterpreted these images and made the corn spirit friendly.

Nordic heat waves, a rushed harvest and a harvester from Westphalia

We didn´t make it back on time to Finland. Due to the recent heat wave in the north, our rye ripened so fast that it was ready before the originally calculated date and had to be harvested as soon as possible. Fortunately, the village and our hosts were there and the harvest already took place on Wednesday. Our agricultural advisor arrived with his brand new (!) combine harvester, which had just been delivered to him from Westphalia, and our photographer Kim was available to document everything for us which was a great relief.
We were connected live via video. At least that was something.

The rye was so dry that it no longer needed to be taken to the drying facility.
We now have 700 kg of rye.

Next week we will also be back.

Before we left Vörå (Vöyri) the last time we used the drone to document the field. Our agricultural consultant is not worried about the rye falling over, apparently it will not cause problems for the harvest process.

We are now preparing our upcoming performance for our next stay in Vörå. In the performance we will deal with traditions related to the harvest that were practised in the North.

And we will be back soon!

Our time in Vörå is up for now. The lovers sat in front of the heart, our hosts invited us to their summer house near Vörå where we spent a day in the sauna while outside a storm was passing by, our agricultural advisor (Grannas Lantbruk) served us a most delicious ry porridge and the famous sauna that was brought from Vörå to Basel to support the band KAJ which represented Sweden in the ESC and comes from Vörå is now back in town and can be rented.

In the heart of the historic “Rågens rike”, on a 2000 m² rye field at #Abramsgården in #Andkil, artist duo Scheibe & Güntzel invite you to a unique art experience. Through a site-specific installation and a participatory photo event, they highlight the disappearance of traditional rye fields – and their role as hideaways and meeting spots for loved ones. Hovering above the field is a slowly rotating, glowing red heart. For three days, a bench will be placed beneath the heart, where visitors can sit – alone or together. The artists will photograph these encounters, print the images on-site, and give them to participants as a memory of the #summer, the field, and the moment.

Project update: We are back, the rye grew up to 2 meters and the Plaza has officially become a meeting point!

We are back and the rye looks great. It has been a real rollercoaster the last weeks since the rye has fallen over several times after heavy rains but as it looks like most of it has recovered and is standing again. And now the summer wind gently blows the rye which has actually grown almost up to 2 meters.

We had always wanted the main space in the middle of the field (Plaza del Råg) to become a space for the community. A space to meet, to hang out and to just enjoy the rye field. Yesterday was perfect, two neighbours celebrated their birthday on the Plaza and we all dived into the summer. It was marvellous.

We are now preparing for #Vörådagarna 2025 a week of events where the whole community presents itself. Stay tuned, more to come soon.

Part 4 / MÄMMI/MEMMA
A participartory #soundperformance

In the spring chapter of our project series #PRESERVED we designed a sound performance celebrating the traditional dessert "#mämmi" served at #Easter. For those who are not Finnish - mämmi is dark-brown pudding made of rye flour and rye malt, served with cream and sugar. The performance was planned as a participartory project where the people of #Andkil (#Vörå) were invited to join and contribute.

The central meeting point of the project - the Plaza del Råg, located in the middle of the #rye field which was planted in August 2024 served as a stage. An active/powered speaker system was used to present an experimental (sound) interpretation of the terms „mämmi“ (fin.) and "#memma" (swed.), inspired by #Dadaism or artists and writers like Ernst Jandl and Josef Beuys. The active speaker enabled us to put different layers of sound on top of each other and repeat them in loops to eventually creating a space of sound based on the constant repetition of the declination of the terms „mämmi“ and "memma". Philip (@(@arteluce23) started the performance by repeating the declinations and then we handed the microphone to the people from the village. We had a blast. After the performance mämmi was served in the newly restored barn of #Abramsgården.
